Harvest: Manual harvest in small crates

Production: At the beginning of October the best Rebo and Marzamino grapes are selected manually and placed in boxes, ready for the drying which will take place in the attic. After a weight loss of 30%, the clusters are further selected and then pressed. Fermentation is very slow with extreme attention to maintaining the aromas, extracting the color and managing the sweetness and elegance of the tannins. At the end, the wine is decanted into barrique to optimize the stabilization of the color and the development of the malolactic fermentation. We then move on to the aging phase in second passage French barriques where the wine rests for 12 months and is finally blended with Groppello, previously vinified in steel barrels. The bottle will refine another 6 months before being presented on the market.

WINE DESCRIPTION

The company\'s vineyards for the production of this wine are located in Valtènesi, on the hills of Soffiano in the area called "Sofai", which means under the beech trees. In the shade of these trees, the farmers of the area loved to have lunch in the summer months during the midday break and to let the oxen rest.
The Soffaino hills are located in the Garda Bresciano area on the western shore of Lake Garda, between Lake Lucone, a prehistoric basin that has become a UNESCO heritage site as an important archaeological site, and the Laghetti di Sovenigo, which represent the best example of a basin. intermorenic del Garda, which in the period of July and August offer a unique spectacle, when the waters are covered with the pink of lotus flowers.


TASTING NOTES

Intense and brilliant ruby red color. The nose is immediately rich and penetrating; it expresses itself with hints of undergrowth fruit, blackberry jam with an elegant spiciness and hints of cocoa hints. On the palate it shows a structure of good volume, an excellent balance and a great elegance with tannins well integrated with the fruit component.
